Old Vine Chenin Blanc 2023 Grolleau developed by mingling various bourbonsThis chenin blanc was hand harvested in passes, to obtain both natural acidity (early picking) and riper flavors (later picking). After a short overnight settling, the juice was transferred to stainless steel tanks for fermentation with wild yeasts, then aged on the lees for 5 months.
